Side dish for 2 persons:

Preheat oven to 220 degrees C. Wash the Jerusalem artichokes well and dry them with a kitchen towel. Cut the artichokes in half and marinade them (in a bowl) with the olive oil, seasalt, pepper and the finely chopped thyme and rosemary. Place them in the oven, skin side up, for about 25 minutes (until their skins turn brown). Then open the oven and change the temperature to 120 degrees C. Roast for another 20 minutes. Take out of the oven and season each piece with some truffle butter (optional but very delicious!!) and salt/pepper if needed. Enjoy!
